You’ll start to notice that I’ve become slightly obsessed with cauliflower. Roasted, sauteed, steamed, barbecued. I love it in so many ways! Plus? It’s so versatile that I can create faux dishes that act like the carb dishes I love. Including one of my favorite comfort foods: mashed potatoes.
Now some people may not care for mashed cauliflower. And I was one of them when I followed a lower fat diet. However with the LCHF lifestlye, heavy whipping cream and butter are key ingredients. And that means FLAVOR! I’ve also come to realize that mashed cauliflower also needs a good sprinkling of salt and pepper to make it superb.
Once you add in all of that flavor, you can enjoy mashed cauliflower in place of your mashed potatoes at any family meal. I’ve even used this recipe to top shephard’s pie (recipe coming soon!) and will be bringing a batch of it to Thanksgiving so I can enjoy all of my favorites when we’re at the dinner table.
